Hands Down the Best Guacamole You’ll Ever Eat

There are few things I can honestly say I make better than any restaurant I’ve ever eaten at!  But thanks to the best homecook I’ve ever met, who also happens to be one of my former employers, I say with confidence, this is better than anything you can buy in a package, or at any store or restaurant.

Guacamole!  Or like Hubby Bumpkin calls it ‘Guac-a-mole’ (like whack-a-mole) is such a simple, and relatively healthy (avocado has lots of healthy fats) topping for all our favorite mexican dishes!  Here’s how you can make it at home.


You’ll need 3 ripe Avocados, peeled and pitted

1 small tomato (or half of a large one)

1/2 a white onion

Juice from 1/2 of one Lime

Salt to taste


In a food processor or with a hand mixer combine the avocados, tomato, onion and lime juice.  Once it becomes a puree, add salt to taste.



This is such a crowd pleaser, even for my hubby who doesn’t like onions, or friends who hate tomatoes.  Just be sure to blend long enough to hide any ‘flecks’.
